Louisiana Pralines


1 1/2 cups evaporated milk

2 cups sugar

8 tablespoons of  butter 

1 teaspoon vanilla flavor

1 ½ cups of pecan pieces (more or less to your liking)

On a stovetop melt butter, sugar and evaporated milk in sauce pan on medium heat. Stir to thoroughly combine.

Bring mixture to a slow boil, then reduce heat to medium/low.  Let cook for about 15 minutes without stirring.                      After 15 minutes, stir, scraping the bottom and sides as the mixture will begin to thicken.  Cook while stirring occasionally, making sure mixture does not scorch, for about 10 minutes then add vanilla, stir until combined.  Add pecans.  Continue cooking, consistently stirring, for about 5 minutes or until mixture reaches soft ball stage, 235 to 240 degrees F.   Remove from heat.  Continue to stir,  mixture will thicken as it cools.  Drop by spoonfuls onto parchment paper.
